For this week’s meal planning Monday, we have got plenty of food in our freezer, fridge and cupboards, so we are not going to the supermarket. I bought a few things yesterday to last us and I’m quite excited about this week’s plan because it also includes the first crops from In Law’s allotment.
Monday – Slow Cooked beef casserole. Buddy is starting to like food again, think he is on a growth spurt. He is actually feeding himself again, it’s so good. I know that he eats this at nursery so I’m going to give it a go. We will serve with mash and buttered kale. The kale is from the allotment and I am so excited to give it a go.
Tuesday – Prawn stir fry – This is using my new found confidence making Chinese food after watching Gok Wan. We will be using the mange tout from the allotment. Buddy won’t eat this so he is having lemon sole goujons.
Wednesday – Cottage Pie – The last of our Costco cottage pies, it really is fabulous.
Thursday – Kedgeree – With the amazing smoked haddock that we get from Delish Fish, we use an adapted recipe from Fish is the dish which we will upload to the blog after I get some good shots on Thursday.i
Friday – Chicken enchilada pizza – This is a Pampered Chef recipe so I can’t blog it, but if you’d like it, leave a comment and I’ll email it through to you. It is so easy and the best homemade pizza ever!
Saturday – Hake Putanesca – This is a firm favourite now. The hake is so tasty and is great value for money.
Sunday – Beef stir fry – again using my new found recipe from Gok Wan’s Eating Chinese series
