Our Meal Planning Monday post this week is all about healthy eating. The last two weeks have been mighty stressful what with the car situation and that, but it is all sorted now. I didn’t realise how much I’d been stressing about it all until I thought about how rubbish my diet had been. I only tell you about my evening meal on this planner, but I’d been having a can of full fat coke a day, coffee (which I had totally weaned myself off during pregnancy) and picking for lunch, mostly toast (too many carbs) So this week I feel a bit podgy if I’m honest, so I’m going to try and keep my portion sizes down and cut out the crap and back to green tea rather than coffee. Wish me luck.
Monday – Roast chicken with potatoes and veg from allotment – This was meant to be dinner last night, but it wasn’t defrosted properly
Tuesday – Chicken stir fry using veg from the allotment and left over roast chicken.
Wednesday – I’ve got haddock from Delish Fish and I’m looking for a new recipe to try out, so I’m going to look through all of the recipe books I have for a nice one, I’ll update this later once we decide. Of course if you have a nice recipe for haddock then please do share as I need some inspiration. I think I’ll even get the slow cooker out to give it a whirl, haven’t done that in ages and every Sunday Mediocre Mum hosts Slow Cooker Sunday and I kick myself as I’ve nothing to add!
Thursday – Pasta with pasta sauce from the lovely freezer fill that I got from Inside Out Chef last week.
Friday – roast salmon with seasonal veg from allotment. Grim has a gig tonight, so it’s me & Buddy again.
Saturday – chicken curry, I am going to give my friend Ruth’s recipe a go you can grab the recipe here over at NotsosuperScottishMummy
Sunday – Grim is out at another gig tonight so I want to make something for an early dinner so think we’ll have homemade soup & toasties. That way we’ll get our veg fill, use up the veg from the allotment that we need to.
