Wow it really is so dark this morning – The coffee pot is on the hob making some lovely Italian coffee to wake us up and I’m just catching up. I woke up at 5am this morning, body is getting ready for the clocks going back I think – it’s funny how that happens isn’t it?  This week we are eating healthy food, so why don’t you join us and share your favourite dishes. We have the meal planner all filled out and on the white board so that everyone knows what we are having. Here are the dinners that have made the meal plan for this week:

Monday – Mushroom & Blue Cheese Risotto – I make this in my Instant Pot and recently when chatting to a friend’s new partner, he’s a chef! He was absolutely horrified that I would cook my risotto in such a way – He trained for some time in an Italian restaurant – but I have to say, this is the most simple and tasty recipe I have ever had. Click here to get the recipe. I have to say I used normal chestnut mushrooms and we didn’t have any wine, so I added more chicken stock.

Tuesday – Salmon & Roasted brocolli – I found this roasted brocolli on My Fitness Pal, it’s just balsamic vinegar, olive oil and english mustard and you cost the brocolli and roast it in the oven for 25 minutes, so tasty and you don’t really need any potatoes or anything like that.

Wednesday – beef goulash in baked potatoes – Last week, Grim made a lovely rich slow cooked goulash, so we’ll have that on baked potatoes.

ThursdayRagu – Click through for the recipe – can’t quite believe, I have been making this super dish for 5 1/2 years, that’s quite scary, but it really is super easy, freezes well and a treat for the whole family.

Friday –  At rugby on Sunday one of the mums was saying how she had cooked Amelia Freer’s prawn curry. I love her ethos on food, it just makes sense!! So when I got home I looked up the recipe for prawn and aubergine curry, so we’ll have that as a treat on Friday night.

Saturday – Hake & Putenesca sauce – I made up this recipe while I was working on Fish is the Dish I wanted to have Hake as it has a higher omega 3 level than other white fish, but I wanted it to be easy weeknight meal, so we have the hake pan fried and then pour over our sauce and serve with linguine – it’s very tasty. I must share the recipe – I did before but it must be on my back up awaiting moving over!

Sunday – We are going to have roast chicken this Sunday, it’s a favourite of mine and we make yorshire puddings that the boys will also have for their dessert with nutella and skooshy cream!
