We are back on track, the blog is up to date and I’ve been meal planning again and I’ve actually been online more this week than I have for months. I am feeling more myself, funny how life can just get on top of you at times, isn’t it. What I have realised while I’ve been having a break is that what I eat really does make a difference to how I feel, so this week, with this in mind, we are going to follow the following meal plan. We have the meal planner all filled out and on the white board so that everyone knows what we are having. Here are the dinners that have made the meal plan for this week:
Monday – Salmon with kale and polenta chips
Tuesday – Homemade flat bread pizzas, when I make these, I get the boys to add their own toppings. We also make double the amount of flatbreads to pop in the freezer for next time.
Wednesday – Steamed chicken, brocolli and sweet potato – This is a great simple meal and I’ve just bought myself a new steamer, so can’t wait to have a go. My steamer that my Mom bought me for moving into my first flat when I was 20 gave up the ghost last year and I’ve really missed it. Only just got round to getting a new one.
Thursday – Ragu – Our staple and great dinner – We have this weekly and with a lovely green rocket salad, it really is the most tasty dinner.
Friday – It’s fish pie tonight – the boys have actually asked to try this. I tried before about a year ago and they refused, but we watched eat well for less the other day and I was chatting about options for good healthy food and Buddy agreed that he wanted to give this a go.
Saturday – When we watch eat well for less, they made a lasagne and Buddy asked if he could help me make it, so we are going to give it a go and see if I can get them cooking as well as eating good food. The sadest thing about the episode of eat well for less that we watch is both the mother and daughter couldn’t cook as no one had taught them and this prompted Buddy to ask if I could teach him. Hell yes, I have only been waiting for 9 years for my boys to take an interest in cooking and that their food is for enjoyment and not just fuel!
Sunday – We’ll be having a roast chicken with all the trimings.
