This week is all about restoration and I have made my meal plan all around getting a balance, lunches are light and generally salad with seafood, no rubbish snacks, no booze and cutting back on the caffeine. We have the meal planner all filled out and on the white board so that everyone knows what we are having. Here are the dinners that have made the meal plan for this week:
Monday – Ragu – I met up with the daughter of the man who taught me how to make this ragu last weekend and she was so excited to hear that we still make this and it features so heavily in our meal plans – It really is the tastiest dinner ever – We’ll serve it with a rocket salad.
Tuesday – Chilli baked potatoes – I love this dinner and our chilli was made over the weekend and frozen. It’s got about half the amount of beef mince in it we normally would have and I’ve added black beans and other veg along with our red kidney beans to make it tastier.
Wednesday – Really Good Chicken Balti – Grim made this at the weekend and it is so simple but super tasty – It’s the Hairy Bikers curry and seriously, if you fancy a take away, try this – trust me it’s as good!!
Thursday – Salmon & green bean salad – This is something I saw on Jamie Oliver (I think) and he put in hot smoked salmon with green beans and a normal salad – I have got salmon fillets so will make them with a cajun spice on top and bake in the oven, serving with cooked green beans and salad. I will make a dressing with sweet chilli sauce, squeeze of lemon and sour cream – this is my new favourite dressing to make too!
Not sure about the weekend yet – we’ll see as we get through the week.
