We’re just back from holiday and it was this week last year that I kickstarted my healthy living, then fell out with it towards the end of the year – Well I’m back where I started, the clothes are fitting a little less well and I need to do something about it. I will document my progress on my Fitness Friday feature but for now – we are back to healthy eating, cutting the calories and upping the exercise to get this bootie back in check!
As always, I’m going to fill in my Meal Planner and stick it to the fridge to remind everyone what we will be eating this week.
Monday – Mushroom pasta – This is a great simple easy recipe to do and we have it a lot. It’s basically shallot, creme fraiche, mushrooms, procuito and pasta.
Tuesday – The Body Coach Chicken Pie – my friend Sarah told me about this and I couldn’t believe how easy it was and it is also super tasty
Wednesday – Ragu – This is the first time in ages that we’ve had our Ragu as the kitchen has been out of commission and we’ve been away, but I’m looking forward to this
Thursday – Vegetable balti – I’m going to experiment with this, I want to try to have more veggie meals in the plan, so I’m on the look out for a decent recipe
Friday – Fish and veggies – G will be having Salmon and I will have cod, I’ll just make up little parcels with the fish sitting on top of some veg and a little white wine and season it with pepper
I will plan the weekend nearer the time, if the weather keeps up it will be a BBQ on Saturday. Sunday I’m thinking of having a roast – but we’ll see what I find at the butchers.
