I know I’ve been quiet recently, just trying to regroup. Feeling so much better and eating better too. I wanted to make sausage stovies last night and given my main foodie influencers are not Scottish, it’s not something I have grown up with, so I asked my Facebook friends for their advice. There was lots of it – even talk of secret ingredients. So I took on board some of the comments, read some other recipes that talk of this being a Monday evening dinner, using the leftovers from the roast on a Sunday. So that’s the tradition for it. Here is my recipe:

Ingredients

2 packs of skinless sausages, cut into 6
6 large maris piper potatoes, peeled and chopped into about 6 large pieces
2 medium onions, peeled and diced
2 beef oxo stock cubes
4 tbsp of bisto gravy powder
Boiling water to just the top of the ingredients

Method
  1. Chop onions and fry in butter, cook until just soft
  2. Add in chopped potatoes 
  3. Add in the sausages
  4. Add in all of the other ingredients and mix gently
  5. Cook on the stove until the potatoes start to break up on stirring – This took about an hour for me, but the recipes I read said minimum time is 30 mins, max being 1 1/2 hours

Notes:

  • Don’t stir often, just to stop it sticking to the bottom of the pot
  • Watch you don’t put too much water in – mine made a lovely gravy, but trick is long and slow with this one and add more water if need be
  • I served mine with oatcakes, seemed the best Scottish option, but others serve with toast 😉
